How to use up leftover sunflower seeds
- Crunchy tender stem
Roast 250g tenderstem broccoli in a little oil for 15-20 minutes until crisp. For the last 5 minutes of the cooking time, toss a small handful of sunflower seeds in olive oil and salt, then add to the broccoli. Serve with white fish. - Sunflower seed brittle
Toast two good handfuls of sunflower seeds in a dry frying pan over a medium heat until fragrant, then set aside to cool. Put 200g caster sugar into a large, spotlessly clean frying pan and gently heat, without stirring, until the sugar has melted into a caramel. Quickly stir in the sunflower seeds, then spread out on a baking sheet lined with non-stick baking paper and cool. Break into shards and use on ice cream, or serve as a petit four. - Salad topper
Heat the oven to 180°C/160°C fan/gas 4. Toss a small handful of sunflower seeds in a little olive oil, a pinch of cayenne pepper and some salt. Spread on a baking sheet and roast for 5-10 minutes until golden and crisp. Toss into a salad after dressing, just before serving.
