Top with the remaining batter, then bake. - Iced coffee
Brew 500ml black coffee, leave the cool, then chill. Meanwhile, heat 200ml whole milk in a pan until just simmering, then add 1 1/2 tbsp dulce de leche and stir until dissolved. Cool, then chill. Stir the cold milk mixture into the coffee, then pour into 2 glasses filled with ice. - Salted caramel filling
Beat 150g slightly salted butter (at room temperature) with 200g icing sugar until fluffy. Add 3 tbsp dulce de leche and a pinch of salt, then beat until smooth. Use to decorate a 20cm cake or batch of 12 cupcakes.
