The Bertinet Bakery was founded in 2007 and is run by baker Richard Bertinet. Trained in his native Brittany, Richard has almost 30 years experience as a baker and chef, and has worked as a consultant to major manufacturers, written five cookery books and also runs the Bertinet Cookery School.
The bakery produces a range of sourdough and long fermentation breads alongside specialist viennoiserie for its two retail outlets in Bath and local farm shops, delis, restaurants and hotels. The bakery also travels to local schools, where Richard teaches children as part of the Royal Academy of the Culinary Art’s Chefs for Schools programme. This supports the bakery’s aim of “making exceptional quality bread as widely available as possible”.
What the judges said:
Our judging panel loved the story of the Bertinet Bakery and its tradition of using a starter culture with bakery science and knowledge, to create a loaf with complex flavours and textures. They commended the production of their ‘Artisan for Everyday’ White Sliced Sourdough tin loaf, and liked the idea of a quality great tasting alternative to the standard sliced white loaf.
