  1. Prepare up to 1 day ahead, reserving the coriander and garam masala for garnish. Reheat in a saucepan over a low-medium heat, adding a splash of water if it starts to dry out.

  2. Tinned jackfruit is now readily available in supermarkets. If you’d like to try using fresh jackfruit, look for it at south Asian grocers or buy online from desikhazana. Be sure to buy raw green, unripe jackfruit for this recipe, as it has the right meaty texture and flavour. When it’s riper it becomes sweet.
