Shallot tarte tatin

You won’t believe that Gaz Oakley’s shallot tarte tatin is vegan. Sweet shallots are caramelised in brown sugar, balsamic vinegar and brandy until gorgeously sticky. Serve at a dinner party and watch your guests’ jaws drop.

This tart is sweet-savoury. Reduce the sugar slightly if you prefer a savoury edge.
Complete to the end of step 3 up to a few hours ahead. Reheat the shallots in the pan and complete the recipe to serve.
