  1. To butterfly shelled prawns, first shell them. Run a small, sharp knife down the centre of the back to make a shallow incision, then remove the dark intestinal tract with the point of the knife. If you want, do the same on the underside and pull out the bloodline (neither are harmful, but they can taste bitter).
