Traditional North African mint tea should be served very sweet. This recipe uses fresh mint and serves 4 and is ready in 10 minutes.

The leaves for gunpowder tea are withered, steamed, rolled into pellets, then dried; this helps lock in the aromas.
Gunpowder tea is available from Whittard, Fortnum & Mason, Selfridges, Amazon and specialist tea shops.
Rare Tea Company’s Whole Leaf Green Tea is a good substitute.
Also, if your tumblers have no handles, fold a paper napkin into a triangle, then wrap it around the glass and twist the ends.
Serve in tiny ornate glasses or larger ones with a metal handle.
