Easy swaps: Use tenderstem or chinese broccoli (gai lan) instead of purple sprouting broccoli. The sauce also works well with seasonal greens like kale and cavolo nero.
Fermented black bean paste is an umami-rich condiment made from black soy beans. Commonly used in Chinese cuisine, it’s found in Asian supermarkets and some larger supermarkets. If you can’t find any, use a good quality black bean sauce or an umami paste instead.
