  1. Next time: Use raspberries or pitted cherries here instead. Add a splash of liqueur or prosecco to the strawberry sauce for a grown up flavour.

    Use it up: If you have egg whites to use up, you could make your own meringues for the Eton mess.

  2. Make and roll the sponge and leave rolled in the paper (step 3) up to a few hours ahead. Unroll, then fill with the freshly made eton mess. Leftovers will keep for up to 2 days, but the meringue will start to dissolve after mixing with the cream. Serve leftovers with extra meringue crumbled over the top.
