Crab and avocado tortillas

These canapés from Jason Atherton taste as good as they look. If you don’t have time to fry the tortillas, you can serve the crab and avocado on bread instead.

  1. Prepare the crab and the avocado up to 4 hours ahead. Put in separate bowls, cover and chill. Remove half an hour before serving. Cut and fry the tortillas up to 24 hours ahead. Keep in an airtight container.
