Easy swaps: Not a fan of coffee in cake? Omit it from the cream mixture.
The undecorated tart will keep for 1 day in an airtight container at room temperature. Make the toffee up to 2 hours ahead.
When making toffee, the equipment must be very clean and the sugar completely dissolved before you bring it to the boil or the syrup might crystallise. If you have a sugar thermometer, the toffee needs to reach hard crack stage (150-155ºC) to set properly.
