Barbecued fillet of beef with horseradish butter

Roast beef and horseradish is a classic combination but this barbecued joint, served with a potato gratin, takes things to another level.

  1. If the weather is bad you can cook the fillet in the oven. Sear it as in step 6 but on the hob in a heavy-based frying pan with a little vegetable oil, then transfer to a 200°C/180°C fan/gas 6 oven and cook for 25 minutes (for medium-rare).
