Air fryer mini mince pie turnovers

Even the simplest mince pie tastes better than anything shop-bought when it’s freshly baked – or in this case, air-fried. These turnovers require just four ingredients and half an hour of your time: the perfect last-minute snack for festive entertaining.
Pastry and air fryers are meant for each other. The pastry will puff up and turn evenly golden all over in roughly half the time it would take in a normal oven. It also means the mincemeat filling won’t overcook, becoming perfectly heated through by the time the pastry’s ready.

Before you start
These turnovers can be made in advance up to step 3, then stored in the freezer. To cook straight from frozen, add 5 minutes extra to the cooking time.
The key to working with puff pastry is the temperature. Keeping it cold makes everything much easier and neater, and ensuring it’s cold before baking will help it puff up nicely in the heat of the air fryer.
