Air fryer crispy ’nduja sprouts

Brussels sprouts crisp up beautifully in an air fryer – the outer leaves caramelising to golden shards. Tossing anything in ’nduja is a good idea, but it works particularly well here, creating a sweet, fiery, salty side.

Before you start
Adding par-boiled foods to the air fryer is always a good idea when you’re after something that’s crisp yet buttery-soft in the centre. Large sprouts are better for this recipe,so they can be both parboiled and air-fried without falling apart. If you can only find small ones, reduce the cooking times slightly to avoid mushy or burnt sprouts.
Get ahead by parboiling the sprouts in advance. Cool them down straightaway in iced water to preserve their bright green colour, then drain and refrigerate for up to 2 days.
