What they do:
Described as a ‘hot toddy in a jar’, the chilli preserve Galloway Chillies calls Chilli Burns is made almost entirely from local, seasonal produce: Galloway honey, Bladnoch malt whisky distilled in the local distillery, and their own chillies. Only the sugar and the lemons are imported, though the company are currently cultivating lemons in their polytunnels in the hope of growing their own in future. The chillies are grown without chemicals: natural predators such as ladybirds and lacewings are encouraged to control pest populations, and liquid seaweed is used as feed. In coming years, the hope is to rent commercially heated tunnels and to supply local businesses that are currently importing their chillies. Galloway Chillies’ founder Sheena Horner is as passionate about supporting others as about her own business, and mentors a number of small producers in the region, as well as chairing the local Wigtown Food Festival, to help showcase the talents and tastes of Scotland.

The judges admired Sheena Horner’s evident passion for helping others, and her commitment to sustainability and sound ecological principles. They particularly liked the ‘hot toddy’ idea for the Chilli Burns preserve.
