Brittany-born, Bath-based Richard Bertinet has a well deserved reputation as one of the UK’s most inspirational and talented bakers and teachers. Richard has over 20 years’ experience as a chef and baker, and is passing on his skills to a new generation of cooks through the popular classes he runs at The Bertinet Kitchen Cookery School in Bath.
The 1.2kg sourdough loaf is one of Richard’s signature bakes. It’s made with the bakery’s own starter, slow raised, hand moulded, proved in traditional lined baskets, then baked to crisp-crusted perfection. Each batch takes about 18 hours from start to finish and the loaves always look gorgeous and have a wonderful crumb, chewy crust and complex, pleasantly tangy flavour.
