What they do:
Copas Traditional Turkeys have been rearing free-range bronze birds for more than 60 years. Their founder, Tom Copas Sr, started the business in 1957 with a small flock of turkeys given to him by his father.
Copas’s turkeys are reared in the Berkshire countryside and are allowed to grow to 5-7 months of age before being taken to slaughter – this is in contrast to some intensively reared turkeys that tend to only reach two months old. Their extended life cycle gives them a denser meat and superior fat cover. This means that, after being game-hung for two weeks, they can be dry plucked. While cooking, they also shouldn’t need to be basted, and the meat stays more moist.
Every December, Copas supports up to 80 hospices by donating as many turkeys as they can to ensure that patients and staff have a turkey for their Christmas meal.

The judges appreciated Copas’s involvement in the local community, highly commending them for their charitable Christmas-time donations. They noted that there was a real sense of “palpable pride” when it came to the business and the quality their birds.
