What they do:
Clandeboye Estate is home to Lady Dufferin, the Marchioness of Dufferin. In 2007, after conducting research to make sure that they weren’t detracting from local businesses, Clandeboye Estate began producing hand-strained, Greek-style yoghurt, using the milk from their award-winning herd of holstein and jersey cows.
After the yogurt is fermented it’s hand-strained through cheesecloth for an hour and a half before being packaged for sale. It contains no additives or preservatives and its creamy texture is down to the high fat content in the blend of two types of whole milk.
Clandeboye’s motto is “We work up to a standard, not down to a price”. Mark, the herdsman, knows each pedigree animal by name and has worked to develop a bloodline of cows that produce quality over quantity. The estate is Red Tractor approved and their animals are reared with longevity in mind. An anaerobic digester produces enough heat and electricity to meet many of their energy requirements.
