4 three-course menus for April
With Easter just around the corner, we’ve created a fabulous feast for friends and family to enjoy over the long weekend.
But that’s not all. Check out our dinner party menu to impress, the meal that can easily be knocked up in an hour as well as a vegetarian-friendly three-course dinner. And, they all make the most of April seasonal produce. Invite your friends over – it’s time to get cooking!
The Easter menu
It’s arguably the most important menu of the month: say hello to our big Easter feast. Nailing the menu can be a difficult balancing act, so we’ve done the choosing for you.
Start with an elegant starter of shallot and dill beetroot carpaccio with crispy halloumi, follow it with a six-hour slow roasted lamb shoulder with charred red pepper and rosemary gravy and round it all off with a crowd-pleasing Easter meringue wreath, topped with Malteser mini bunnies, Galaxy golden eggs and M&M’s eggs.
The impressive menu
Invited round your foodiest of friends and need a menu to impress? This is it. Start on a luxuriously creamy note with our gratin-like crab stretch, pop this rack of lamb in the oven with an olive and caper crust, then finish with a gorgeous galette filled with a chocolate and ginger frangipane.
The vegetarian menu
Cooking for vegetarians is easy when you know how. These spinach and ricotta lasagnes combine ricotta, mascarpone and parmesan for the ultimate cheese factor. Kick off the meal with our wild garlic soup, served with garlic butter croutons and combine two classic favourites in one with this rhubarb and custard crumble tart.
The speedy menu
Put on a knockout dinner party feast in well under an hour with our deliciously speedy menu. The mozzarella bruschetta with rocket drizzle take 15 minutes to prepare, the creamy baked salmon in a spinach sauce is a 30-minute job and make little pots of Nutella chocolate mousse in just 5 short minutes.
