How to use up leftover truffle oil
- Truffled mash potatoes
Peel 1kg potatoes and cut into even chunks. Boil for 15-20 minutes until tender, then drain and put in a large bowl. Add a large knob of butter, 2 tbsp double cream, 1/2-1 tsp truffle oil and a good pinch of salt and pepper, then mash until smooth. - Truffled eggs
Heat a knob of butter in a frying pan over a medium heat. When melted, pour in 6 beaten free-range eggs and 2 tbsp double cream. Cook, constantly scraping the bottom of the pan with a wooden spoon, until the eggs are almost cooked but still a little wet. Remove from the heat but leave the eggs in the pan for a minute, then stir in a few drops of truffle oil (less is more). Serve on sourdough toast, scattered with snipped chives.
