How to use up leftover rum
- Hot rum coffee
Add a shot of rum and Irish cream liqueur to fresh black coffee, then top with whipped double cream and a little icing sugar. Sift cocoa powder over the top to serve. - Classic mojito cocktail
Put a small handful of mint leaves in a tall glass with 1 tbsp demerara sugar and a handful of ice, then muddle with an upside-down wooden spoon. Add 30ml rum, 1 tbsp freshly squeezed lime juice and 50ml soda water, then mix well.
