How to use up leftover onion marmalade
- Marinated roast chicken thighs
Rub free-range chicken thighs and drumsticks with salt, pepper, fresh thyme and plenty of onion marmalade. Marinate for an hour. Roast in a 200°C/fan180°C/gas 6 oven for 30 minutes, then add chopped butternut squash. Roast for another 10 minutes, then crumble feta over, add chopped sage, brush with more onion marmalade and roast for a final 20 minutes. - Oniony cheese on toast
Spread a thick layer of onion marmalade onto 2 slices of sourdough. Sprinkle a good handful of mature cheddar on top, then grill until bubbling and melted. Serve sprinkled with fresh thyme leaves.
