What to do with leftover goat’s cheese
Goat’s cheese is a creamy cheese made from goat’s milk. Use up leftover goat’s cheese in your cooking by trying these recipes.

How to use up leftover goat’s cheese
- Marinated goat’s cheese
Put pieces of goat’s cheese into a sterilised glass jar, add a few peeled cloves of garlic, fresh thyme sprigs and whole peppercorns, then pour over good quality olive oil to cover. Marinate for a week in the fridge. Use in salads or on toast. - Cheese croutons
Tear up leftover day-old bread, toss in olive oil and season. Spread out on a baking sheet, crumble over goat’s cheese, then bake at 200°C/180°C fan/gas 6 until golden. Use in soup. - Leek and goat’s cheese parcels
Cook finely sliced leek and onion until soft. Cool, put in a bowl, beat in an egg yolk and crumble in goat’s cheese, lemon zest and chopped fresh parsley. Cut 1 sheet of ready-made, all-butter puff pastry into triangles, top with the mixture, brush the edges with beaten egg, fold in half and seal. Brush with beaten egg and bake at 180°C/160°C fan/gas 4 for 10-12 minutes until golden.
