How to use up leftover fino sherry
- Sherry chorizo
Cut cooking chorizo into thick slices, then fry until crisp in a hot, dry pan. Pour in 1-2cm sherry, then bubble to reduce until syrupy. Serve with crusty bread as a nibble before dinner. - Clam pasta with sherry and pickled peppers
Heat a glug of olive oil in a pan and fry some crushed garlic. Pour in a glass of sherry and add a few handfuls of scrubbed live clams. Cook, covered, over a high heat until all the clams have opened (discard any that don’t), then toss through some chopped pickled peppers and chopped parsley. Stir in cooked pasta, then serve.
