What to do with leftover black pudding

How to use up leftover black pudding
- Empanadas. Stamp out 14cm circles from ready-rolled shortcrust pastry. Chop black pudding, then mix with chilli flakes, crushed garlic and dried oregano. Divide among the circles. Brush around the edge of the circles with egg wash, then fold over into half moons to enclose the filling. Crimp to seal, then brush with beaten egg. Bake at 200°C/ fan180°C/gas 6 for 20 minutes or until golden and cooked.
