How to use up leftover black olives
- Tapenade
Whizz a large handful of pitted black olives with 1/2 garlic clove, chopped fresh thyme, lemon juice and a few glugs of olive oil. Season to taste and spread on toasted baguette as a snack. - Pasta sauce
Heat some olive oil in a deep frying pan, then gently fry chopped onion and garlic until softened. Add fresh chopped tomatoes and a glass of white wine. Bring to a simmer, then reduce until thick and richly flavoured. Stir in chopped pitted black olives and a large handful of fresh basil leaves, then season to taste. Stir into cooked pasta with plenty of grated parmesan. - Olive and rosemary bread
Make a basic bread dough (find a recipe at deliciousmagazine.co.uk). After the first rise, knock back the dough and knead in a handful of roughly chopped pitted black olives and 1 tbsp finely chopped rosemary. Shape, prove and bake.
