What they do:
The Game Chef – aka Tom Godber-Ford Moore – spent several years cooking in the Mediterranean for clients ranging from Italian artists to the King of Spain. After eating and drinking his way around the region, he now applies his culinary explorations to game.
A keen shot, Tom felt that game was undervalued in the UK and he sought to find ways to make game more approachable by dispelling the myths of the meat being strong-tasting, dry and challenging to the palate.
Tom worked to create a selection of handmade game rillettes and cured meats, which are sold in local shops.
To spread his message, Tom also has a Game Chef streetfood stand that he takes to food festivals and events throughout the summer. Southern-fried pheasant wraps, pheasant goujons, and pheasant burgers grace the menu, showcasing the versatility that Tom believes game has.
