Waldorf salad with smoked ham

This classic American salad is much better served with home-made mayonnaise, and our special recipe only takes minutes to make.
- Serves 4
- Ready in 20 min
Ingredients
- 50ml apple juice
- 35g sultanas
- 2 little gem lettuce,
- leaves removed
- 2 sticks celery, sliced
- 1 Granny Smith apple, halved, cored and thinly sliced
- 70g walnut halves, toasted in the oven for 5 minutes
- 130g smoked gammon, torn into large pieces
- Handful fresh chives, to garnish
For the dressing
- 50g classic mayonnaise
- 25ml crème fraîche
- Squeeze of lemon juice
Method
- Warm the apple juice in a small pan over a low heat. Place the sultanas in a small bowl, and pour the apple juice over the top, then set aside to soak. Meanwhile, place the little gem leaves in a large bowl and add the celery, apple and toasted walnuts. In a separate bowl, make the dressing by folding the mayo into the crème fraîche, adding the lemon juice and seasoning.
- Stir the dressing through the salad, along with the sultanas, which will now be plump. Toss well to coat, then flake through the smoked gammon. Divide among plates, garnish with snipped chives and serve with crusty bread, if you like.
