Ingredients

  • 170g unsalted butter
  •  170g soft brown sugar
  •  3-6 tbsp brandy

Method

  1. Whizz the butter and sugar in an electric mixer or food processor until very light and creamy – this will take at least 5 minutes – or beat by hand. With the motor running add 3-6 tbsp brandy (depending on taste), whizzing to combine.
  2. Spoon into a bowl and keep in a cool room.

  1. I like to make brandy butter in my food processor as it gives a wonderfully light, fluffy result. You can also beat the ingredients by hand in a mixing bowl using a wooden spoon until pale and fluffy.

  2. Make up to 1 week in advance and keep in a sealed container in the fridge.
