Thane’s brandy butter

This 5-minute recipe by Thane Prince is a whizz to make (literally) and an absolute must on any Christmas table.
- Makes 350g
- Hands-on time 5 min
Ingredients
- 170g unsalted butter
- 170g soft brown sugar
- 3-6 tbsp brandy
Method
- Whizz the butter and sugar in an electric mixer or food processor until very light and creamy – this will take at least 5 minutes – or beat by hand. With the motor running add 3-6 tbsp brandy (depending on taste), whizzing to combine.
- Spoon into a bowl and keep in a cool room.

I like to make brandy butter in my food processor as it gives a wonderfully light, fluffy result. You can also beat the ingredients by hand in a mixing bowl using a wooden spoon until pale and fluffy.
Make up to 1 week in advance and keep in a sealed container in the fridge.
