Stir-frying lettuce – like you would cabbage – is something we should all be doing more of. It’s super-quick and gives a good balance of crunchy and juicy leaves. Here the romaine is coated in a triple-hit of sesame – tahini, seeds and oil – for a rich, nutty contrast.

Ingredients
- 2 tbsp tahini
- Juice 1 lemon
- 2 tsp sesame oil
- 2 tsp light soy sauce
- 1 tbsp sesame seeds
- 1 tbsp vegetable oil
- 2 banana shallots, finely sliced into rounds
- 20g ginger, finely grated
- 2 heads romaine lettuce, cut into 5cm chunks
Method
- Mix together the tahini, lemon juice, sesame oil and soy sauce until smooth.
- Briefly toast the sesame seeds in a large frying pan over a medium heat, then tip onto a plate. Put the pan back over the heat, add the oil to the pan and, once hot, add the shallots and ginger. Stir-fry for 3-5 minutes until softened and golden. Increase the heat to high and add the romaine. Stir-fry for about 4 minutes or until the white parts of the lettuce are just tender and the green parts are wilted and bright.
- Pile onto a serving plate, then drizzle with the tahini dressing and scatter over the sesame seeds.
