Ingredients

  • 1 tbsp groundnut oil
  • 1 garlic clove, finely chopped
  • Knob of fresh ginger, finely chopped
  • 100g vegetarian oyster-flavoured sauce
  • 8 pak choi
  • 100g mangetout

Method

  1. Heat a wok over a high heat, then add the oil, garlic and ginger.
  2. Stir quickly, then add the oyster sauce and pak choi. Stir, then put the lid on and cook for 3-4 minutes until tender.
  3. Stir in the mangetout for the final minute.

For a Chinese-inspired menu that’s ready in 60 minutes, serve these greens with spring rolls, sweet and sour prawns, lemon rice and exotic fruit salad.
