You can order pasilla/guajillo chillies online from souschef.co.uk, or Whole Foods carries a wide range of Mexican dried chilies. A blender or pestle and mortar is better for this than a food processor because it will help it purée smoother.
You can prepare the beef up to 72 hours in advance, leave in the fridge in a sealed container. Alternatively freeze up to 1 month.
