Self-saucing chocolate pudding

This is a quick, simple recipe for the time-honoured favourite – self-saucing chocolate pudding.

- For 4-6 people
- Take 5 minutes to make and 8 minutes to cook, plus standing
Ingredients
- 60g butter
- 225g self-raising flour
- 200g caster sugar
- 60g cocoa powder
- 180ml milk
- 2 tsp vanilla extract
- 175g soft brown sugar
Method
- Melt the butter in the microwave in a deep, 20cm round dish.
- Sift in flour, sugar and 25g cocoa powder, add milk and vanilla extract, and mix well. Sprinkle soft brown sugar and the remaining 35g cocoa powder over the top and pour in 300ml boiling water – don’t stir. Cook in the microwave on High (800W) for 8 minutes.
- Allow to stand for 5 minutes before serving with cream.

This recipe is even nicer with the addition of 10 fl oz of hot black coffee, with 2 oz castor sugar instead of just boiled water. Pour over the pudding mixture carefully then bake 325F for 50-60 mins. Absolutely scrumptious!

If baking in a oven (I didn’t have a microwave safe dish big enough); bake for 15-20 mins at 220°C in a fan forced oven.
