Quick sweet gammon with stir-fry vegetables

Five-spice adds a burst of flavour to this quick and easy midweek gammon dish that can be made in only 15 minutes.
Ingredients
- 2 large gammon steaks
- pinch of Chinese five-spice powder
- 1 tbsp olive oil
- 1 tbsp clear honey
- 1 tbsp Bonne Maman Mandarin Marmalade
- Lime
- 1 tbsp olive oil
- 300g bag mixed stir-fry vegetables
- ¼ red cabbage
- 2 tsp white wine vinegar
- ½ tsp caster sugar
Method
- Season the gammon steaks and dust with a good pinch of Chinese five-spice powder. Heat the olive oil in a pan over a medium-high heat, add the steaks and cook for 3 minutes each side, until the rind is crisp.
- Add the honey, Bonne Maman Mandarin Marmalade and a squeeze of lime to the pan. Bubble for a couple of minutes, turning the steaks until coated, sticky and cooked through. Remove to a plate to rest.
- Pour another tbsp olive oil into the pan, add the mixed stir-fry vegetables and the red cabbage, shredded. Cook for 2 minutes, then stir through the white wine vinegar, caster sugar and a good squeeze of lime.
- Season and toss around the pan for 1 minute. Spoon between plates, serve the gammon steaks alongside and garnish with extra lime wedges.
