Quick chicken saltimbocca

Chicken and parma ham make a classic combination. This recipe shows you how quick and easy chicken saltimbocca is to make and there’s also some extra zing from a lemon butter dressing.
- Serves 2
- Ready in 20 minutes
Ingredients
- 1 chicken breast
- 1 slice of Parma ham
- 1 sage leaf
- Flour, for dusting
- Olive oil
- 1 lemon, juiced and zested
- Knob of butter
Method
- Bat out the chicken breast between two sheets of cling film (using a rolling pin) until about half as thick.
- Top with the Parma ham. Secure the sage leaf on top with a cocktail stick. Dust with the flour and season.
- Pan-fry in olive oil on both sides until tender. Add the lemon juice and butter to the pan and give it a quick sizzle. Garnish with lemon zest.
