Pineapple, cucumber and chilli mojito

Is there a more summery cocktail than this pineapple mojito? We think not. Muddle our pineapple, cucumber, mint and chilli-infused rum with mint and lime, then add soda water.

- Hands-on time 5 min
Ingredients
- ½ lime, cut into wedges
- 2 tsp demerara sugar
- 3 mint sprigs, leaves picked, plus an extra sprig to garnish
- 50ml pineapple, mint and jalapeño rum – or see step 2
- Crushed ice
- Soda water, to top up
- 1 slice pineapple, to garnish
Method
- Squeeze the juice from the lime wedges into a tall glass with the sugar, then drop in the squeezed wedges and the mint leaves. Muddle well to get the sugar dissolving.
- Add the pineapple, mint and jalapeño rum (if you haven’t infused your own, used spiced rum with a dash of pineapple juice and muddle in 1-2 slices of chilli). Half-fill the glass with crushed ice, then stir well. Top up with a little more ice, garnish with a mint sprig and a wedge of pineapple (plus the leaves from the pineapple too, if you like).
