Mini beef sliders

These mini burgers might be small in size but they’re big in flavour. Made with beef mince, capers and dijon mustard – they make a great healthier alternative to a classic burger.

Ingredients
- sunflower oil
- 1 finely chopped onion
- 1 crushed garlic clove
- 500g minced beef
- 1 medium free-range egg yolk
- 1 tbsp rinsed and drained capers
- 60g fresh breadcrumbs
- a handful of chopped fresh flatleaf parsley
- 2 tsp dijon mustard
To serve
- mini bread rolls
- rocket
- sliced avocado and cucumber
- chopped spring onion
- lemon wedges
Method
- Heat a glug of sunflower oil in a frying pan over a medium heat. Add 1 finely chopped onion and 1 crushed garlic clove, then fry for 8-10 minutes until the onion has softened and begins to turn golden.
- Transfer to a mixing bowl and add 500g minced beef, 1 medium free-range egg yolk, 1 tbsp rinsed and drained capers, 60g fresh breadcrumbs, a handful of chopped fresh flatleaf parsley and 2 tsp dijon mustard. Season and mix everything together thoroughly, then shape into 8 equal patties.
- Heat a pan with a glug of sunflower oil over a high heat, then fry the patties for 4-5 minutes on one side.
- Flip the patties and cook for another 4-5 minutes or until cooked to your liking. Serve in mini bread rolls, with rocket, sliced avocado and cucumber, chopped spring onion and lemon wedges, alongside chips, if you like.
