  1. Easy swaps: Swap the lobster tails/prawns for sustainable Scottish langoustines. You’ll need 10-15 (use 3-4 shells for the infused milk).

  2. Assemble the dish up to 1 day ahead. Cook for 5-10 minutes longer to heat through from cold.
