Best Jersey royals with butter and herbs

Looking for the best way to cook Jersey royals? Arguably, it’s the simplest way. Let the fresh flavours of the potatoes to shine through by preparing them with butter and loads of fresh chopped herbs. It will be tempting to eat a pile of these on their own – and why not!
Ingredients
- 600g jersey royal potatoes
- Lashings of butter (preferably from Jersey)
- A generous handful of chopped fresh chives, flatleaf parsley and mint
- Freshly ground black pepper and sea salt
Method
- Put the jersey royal potatoes into a large saucepan and cover with water. Put over a medium-high heat, bring to a rolling boil, then turn the heat down a little and leave the potatoes to bubble away for 10-15 minutes until tender (test with the point of a sharp knife).
- Drain, then stir through butter, the fresh chives, flatleaf parsley and mint. Season with the salt and pepper, then enjoy.
