Homemade lemon barley water

Fancy a zingy summer drink to go with your tennis viewing? Of course you do! Here’s how to make your own homemade lemon barley water – it takes just three ingredients and 10 minutes to make.
- Serves 10
- Takes 10 minutes to make, plus cooling
Ingredients
- 2 organic unwaxed lemons
- 50g caster suger
- 125g pearl barley
Method
- Finely grate the zest from the lemons and place in a large glass bowl with caster sugar. Rinse pearl barley and add to the bowl with 1.2 litres boiling water. Stir well and leave to cool.
- Squeeze the juice from the lemons and mix into the cooled barely water. Strain through a sieve and chill. Serve with lots of ice.
