This hearty French onion panade is an easy way to use up leftover festive bread, cheese and booze. Bake until golden and serve with crisp green salad.

Easy swaps: Any good melting cheese would work here – try cheddar, blue or goat’s cheese, or a mix (use all veggie cheeses and veg stock to make it vegetarian friendly). Add fried pancetta/bacon, mushrooms or fresh herbs if you have them.
