French chicory and apple salad

This classic French recipe for chicory and apple paired with blue cheese and walnuts, makes this salad heavenly starter or a light lunch.
Ingredients
- 2 heads of chicory
- 2 Golden Delicious apples
- 100g Roquefort cheese
- 50g walnuts, toasted
- 1 tbsp Dijon mustard
- 2 tbsp walnut oil
- 2 tbsp olive oil
Method
- Cut the chicory heads in half, take off the outside leaves, then quarter the inside bulb. Arrange the leaves and bulbs on serving plates.
- Quarter and core the apples, then thinly slice and arrange on top of the chicory. Crumble the cheese over the leaves, along with the walnuts.
- Make a quick dressing by whisking together the mustard and both oils in a small bowl. Season with freshly ground black pepper and a little salt. Drizzle over the salad to serve.
