Elderflower creams with brown sugar

This quick and easy dessert made with elderflower cordial can be made well in advance. It’s perfect for spring or summer feasts when you’ve not really got room for a dessert but you still want a spoonful or two of something sweet…

Ingredients
- 300ml double cream
- 3 tbsp elderflower cordial
- 1 tbsp icing sugar
- Soft brown sugar
Method
- Whip the double cream with the elderflower cordial and icing sugar. Spoon into glasses or pots and sprinkle with soft brown sugar.
- Chill in the fridge for 20 minutes, until the sugar has melted into the cream. Bring out of the fridge 20 minutes before serving.

Make the creams up to 24 hours in advance, but don’t top with sugar until around an hour before serving.
