Ingredients

100ml pineapple juice
50ml vodka
25ml blue curaçao liqueur

Method

Fill a large coupe or cocktail glass with ice. Add the pineapple juice. Mix together the vodka and blue curaçao in a small jug, then very slowly pour it into the glass, using the back of a spoon to disperse the stream – the blue half should sit on top of the pineapple juice.

Scale it up: It’s easy to make a bigger batch of this cocktail for parties – just mix larger amounts of the vodka and liqueur together, then pour pineapple juice and the blue mixture to order.
