Croque-madame with Parma ham and Gruyère

This croque-madame recipe with sourdough, Parma ham, Gruyère and a fried egg is a sophisticated take on a French classic. It’s fab as a quick supper – or for an easy Mother’s Day breakfast.

- Serves 4
- 5 minutes to make, 5 minutes to cook
Ingredients
- 4 slices of sourdough bread
- Dijon mustard
- 2 slices of Parma ham
- Gruyère
- 15g butter
- 1 tbsp olive oil
- 4 free-range eggs
- Black pepper, to season
Method
- Spread the sourdough bread with Dijon mustard. Top each with 2 slices of Parma ham, a few slices of Gruyère and another slice of sourdough each, pressing down well.
- Melt the butter with the olive oil in an ovenproof frying pan, fry the sandwiches for 2 minutes on each side, then pop into a preheated oven at 180°C/fan160°C/gas 4 for 5 minutes. Fry the eggs, serve with the sandwiches and finish with a good grinding of black pepper.
