Coronation slaw

A touch of curry powder and some fresh coriander gives classic coleslaw a coronation twist. Using a food processor to shred up your veg, makes light work of this slaw.

Ingredients
- 2 carrots
- ½ white cabbage, cored
- 1 red pepper, deseeded
- 100g yogurt
- 80g mayonnaise
- 1 heaped tsp curry powder
- Juice 1 lemon
- 25g coriander, leaves picked
Specialist kit
- Food processor with grater and slicer attachments
Method
- Use the grating attachment on your food processor to shred the carrots, then swap with the slicing attachment and use that to shred the cabbage and red pepper.
- In a large bowl, combine the yogurt, mayonnaise, curry powder and lemon juice, season well. Add the shredded vegetables and coriander and stir to combine. Season to taste, adding a little more lemon juice too if you like, and serve.

The slaw will taste better after a few hours, covered in the fridge so the flavours can get to know each other, and will keep for up to 3 days. Just bring it to room temperature before eating
