Cinnamon French toast

There’s something instantly comforting about egg-soaked and sugar-dusted bread toasted until golden and crisp. Making a quick flavoured butter packed with cinnamon’s gentle warmth really takes this French toast up a notch – it’s a real weekend treat.

Ingredients
- 70g unsalted butter, softened, plus extra to fry and serve
- 2 tsp ground cinnamon
- 2 tbsp light brown sugar
- 300ml whole milk
- 2 medium free-range eggs
- 8 thick slices stale brioche or white bread
- Maple syrup or icing sugar to serve
Method
- Put the softened butter in a bowl and mix in the cinnamon, a pinch of salt and half the sugar until all combined. In a shallow wide bowl or tray, whisk the milk, eggs, remaining 1 tbsp sugar and a pinch of salt together until smooth. Spread one side of each slice of bread with a good layer of the cinnamon butter, then soak each slice in the milk mixture for 1-2 minutes on each side. Transfer butter-side up to a wire rack set over a tray to catch the drips.
- a large frying pan over a medium heat and add a knob of butter. Once melted, add a few of the soaked bread slices butter-side up to the pan and cook for 4-6 minutes until crisp on the base. Turn over and cook for another 3 4 minutes. Repeat until all the bread is cooked. Serve sprinkled with icing sugar or add a little more butter and drizzle over some maple syrup.

This is a great way to use up stale bread that would otherwise go to waste. It will work with brown bread too – it’ll just have a nuttier flavour.
