This is a great dessert to make in advance as it will keep in the fridge for up to 3 days. Just grate over the chocolate to serve.

This is a great dessert to make in advance as it will keep in the fridge for up to 3 days. Just grate over the chocolate to serve.

Ingredients

  • 750ml whole milk
  • 150g unsalted butter
  • 150g caster sugar
  • 60g cornflour (check it’s gluten free if it needs to be)
  • 150g dark chocolate (70% cocoa solids), chopped, plus extra, finely grated, to serve

Method

  1. Bring the milk to a simmer in a small pan, then remove from the heat just before it starts to boil. At the same time, add the sugar and butter in another pan over a low-medium heat. Once the butter has melted and and the sugar has dissolved, remove from the heat and stir in the cornflour, whisking well to ensure there are no lumps.
  2. Off the heat, gradually add the milk to the butter mixture, whisking all the time, until it’s all combined and smooth. Return to a low heat and gently bring back to the boil, stirring all the time. This will take several minutes, so be patient.
  3. Once it’s about to boil, add the chopped chocolate and whisk in until melted and almalgamated. Divide between 4 glasses or serving bowls. Chill for at least 4 hours. Grate over a little more dark chocolate before serving.
