Quick raspberry ice cream

This quick raspberry ice cream needs just three ingredients. No ice cream machine is necessary, it’s a super quick and super tasty summer-time dessert.

- Ready in 5 minutes
Ingredients
- 600ml double cream
- 2 tbsp icing sugar
- 350g frozen raspberries – or berries of your choice
Method
- Pulse the double cream in a processor with the icing sugar until stiff peaks form.
- Add the berries, whizz until smooth, then taste and add more icing sugar if needed. Serve immediately.
