Celeriac remoulade

This creamy celeriac remoulade is quick and easy to make and a great alternative to coleslaw.
Ingredients
- 1 large celeriac, half sliced into matchsticks, half coarsely grated
- 150ml crème fraîche
- 4 tbsp mayonnaise
- 3 tbsp extra-virgin olive oil
- 2 tbsp Dijon mustard
- Juice of 1 lemon
- 4 tbsp chopped fresh flatleaf parsley
Method
- In a medium bowl, mix all the ingredients until well combined. Taste, season and serve.
